If you are looking for a low carb dish for your holiday meals this year, try replacing the traditional mashed potatoes with cauliflower! I found this recipe online and it is so simple, there is no excuse not to try it!
Ingredients: Serves: 6-8 people
- 2 heads of cauliflower (florets only, no stems)
- 6 cloves of garlic (minced)
- 6 tbsp of olive oil
- 2 tbsp coconut milk (look for thick coconut milk in a can)
- 2 tbsp chives
- Salt and Pepper (for taste)
Directions:
- Boil water with a tsp of salt for taste
- Boil cauliflower until EXTREMELY soft (the softer the cauliflower, the creamier it will be)
- In a food processor, mix the garlic, olive oil and coconut milk
- Add cauliflower to the food processor and mix all together
- Add salt and pepper to your liking
- Mix one final time scrapping the sides to make sure everything mixes
- Fold in the chives
- Serve!
