Roasted Green Beans

Trying new recipes is one of my favorite parts of the holidays. I am always looking to see what I can add to my recipe book. For a holiday party, I decided to give the “traditional” green bean casserole recipe and update. I wanted to create a lighter option to what would normally be a heavy dish. Here is what I was able to do, and nobody missed the green bean casserole!

 

2 lbs. of fresh green beans

1 medium red onion

8 oz. of portabella mushrooms

5 tbsp. of olive oil

½ tsp. dried garlic

1 c. of walnuts

1 c. craisins

sea salt

ground pepper

 

 

Preheat oven to 425 degrees. Grease 2 baking sheets. Wash and trim green beans. Put cut green beans in a bowl with 3 tbsp. of olive oil. Spread green beans evenly onto both baking sheets. Wash and slice mushrooms and cut onion in to rings. Put sliced mushrooms and cut onions into previous bowl and toss with remaining 2 tbsp. of olive oil. Divide mushrooms and onion rings on both baking sheets with green beans. Sprinkle dried garlic powder over both sheets. Add salt and pepper to both sheets for taste. Put into oven for 30-40 minutes or until fully cooked, stirring halfway through. While baking, chop walnuts and craisins. Once the green beans are baked, place into serving dish. Stir walnuts and craisins until evenly distributed. Enjoy!
