This week I spent some time with my mother who reminded me of a dear friend she has, Staci Dowdell who has a recipe for pumpkin cookies that converts even the most devout pumpkin skeptics! We had so much fun with this, and I know you will as well! Thank you Staci Dowdell for this wonderful recipe!
Staci Dowdell’s Delightful
Pumpkin Cookies
Ingredients
1 cup pumpkin
1 cup sugar
1/2 cup vegetable oil
1 egg
2 cups flour
2 tsps baking powder
2 tsps cinnamon
1 tsp baking soda
1 tsp milk
1/2 tsp salt
1 tbsp vanilla
2 cups mini chocolate chips or nuts (optional)
1. Mix the pumpkin, sugar, oil, & egg.
2. In a separate bowl whisk the flour, baking powder, cinnamon, & salt.
3. Separately, dissolve baking soda in the milk and then add it to the pumpkin mixture.
4. Add flour mixture 1 cup at a time until smooth.
5. Add vanilla and Stir in optional ingredients. (chocolate chips or nuts)
6. Spray your baking pan or muffin tin and lay out cookie blobs
7. Bake 375 for 8-10 minutes
Cinnamon Cream Cheese Frosting
8 oz cream cheese–room temp
4 tbsp butter–room temp
4 cups powdered sugar
1 tsp vanilla
1 tsp cinnamon
1. Mix the cream cheese and butter until smooth,
2. Add powdered sugar one cup at a time,
3. Add vanilla and cinnamon. Mix until smooth and creamy!
