One of my daughter’s favorite foods is Chicken Noodle Soup. I created this recipe with her in mind, and prepared it for her, and she loved it! And I know you will too!
Ingredients:
- 2 cups pre-cooked angel hair pasta cut in small pieces
- 4 chicken bouillon cubes
- 5 cups of water
- 1 can of mixed vegetables (or 1 cup frozen vegetables)
- 1 tsp. parsley
- 1 tsp. garlic powder
- 1 tsp. black pepper
- 1/2 tsp. salt to taste
- (1/2 can chicken optional)
Directions:
- Cook angel-hair pasta according to package directions, (or use some you have left over).
- Melt bouillon cubes in water in microwave-safe glass Pyrex measuring cup, for about 1 minute.
- Stir, and add to pot, turn on medium heat.
- Add chopped noodles, along with vegetables to pot, and bring to a quick boil.
- Add dried parsley, garlic powder, black pepper and salt to mixture.
- Once it has come to a rapid boil, turn down to a low heat after about 2 minutes and let simmer.
- Simmer on low for about 5 minutes, then serve.
- Serves approximately 4 people, 1 cup servings.
