Ingredients:
- 1 large cucumber
- 1 pint grape tomatoes
- ½ red onion
- ¼ cup cilantro
- ½ cup feta cheese
- ¼ cup Olive Oil
- ¼ cup Red Wine Vinegar
- 1 teaspoon Granulated Garlic
- ½ teaspoon Oregano
- Salt and Pepper to taste
Directions:
- Cut cucumbers in quarters.
- Cut tomatoes in half.
- Chop onions into quarters.
- Mince cilantro.
- Combine in serving bowl.
- In mixing bowl, combine: olive oil, red wine vinegar, garlic, oregano and salt and pepper to create dressing.
- Pour dressing over veggies.
- Sprinkle cheese on veggies
- Fold all together until completely mixed.
- Place in refrigerator to chill.
