Looking for a fresh side dish to share with your family? One of my husband’s favorite dishes during the summer is a Southwest Summer Salad. Perfect for family picnics!
Ingredients:
- 1 can of whole kernel corn
- 1 can of black beans
- 1 can of chickpeas
- 1 medium red onion
- 1 bunch of cilantro
- Juice from 1 lime
- 2 tablespoons of olive oil
- ½ teaspoon of chili powder
- salt and pepper to taste
- ¼ cup feta cheese
Directions:
- Chop up cilantro (minced).
- Whisk together in small bowl the juice of one lime, olive oil, cilantro, chili powder, salt, and pepper to make dressing and set aside. This allows the flavors to blend together.
- Chop red onion into small pieces (same size as corn kernels).
- Put in serving bowl corn, black beans, chickpeas, and red onion.
- Stir until ingredients are evenly mixed.
- Stir dressing once more if there is any separation of ingredients, and pour into serving bowl.
- Stir salad ingredients until evenly coated with dressing.
- Top with feta cheese.
- Put into fridge for at least 2 hours (best served cold)
- Serve and enjoy!
