Mama’s Jambalaya

Now that the weather is getting cold, I like to make warm, comfort food meals. This dish is one of my mom’s recipes, and it checks all of the boxes. It is packed with spice and perfect to warm your tummy on a cool day.

Ingredients:

  • 12 oz. bacon (cooked and crumbled)
  • 2 bunches green onion (chopped)
  • 2 cloves garlic (minced)
  • 1 red pepper (diced)
  • 1 green pepper (diced)
  • 2 large tomatoes (chopped)
  • 1 tbsp. basil
  • 2 tbsp. chili powder
  • ½ tbsp. paprika
  • 1 cup chicken broth
  • 1 ½ lb. meat (chicken, sausage, beef, or shrimp)

Directions:

  1. Cook enough rice for your family/friends
  2. Cook bacon until fully cooked
  3. Set bacon to the side on a paper towel to cool and degrease
  4. Stir fry the meat of your choice until fully cooked, season with salt and pepper
  5. Using 2 tbsp. of vegetable oil or bacon grease from earlier, stir fry the onions, garlic, and peppers for 3 minutes
  6. Add the tomatoes and basil and cook for another 5 minutes
  7. Add crumbled bacon, chili powder, paprika, and chicken broth
  8. Cook until bubbly (light boil)
  9. Add meat and stir to combine
  10. Allow meat to soak in the flavors you’ve created!
  11. Serve over cooked rice and ENJOY!
